Calling Vegemite and Marmite lovers, this ramen will be your new favourite go-to recipe that is quick and easy to make in the middle of a busy working week. Delicious silky noodles tossed in vegemite and topped with a soft-boiled egg all completed in 15 minutes. This is a quick lunch or dinner recipe for when you don't have the time or energy to make anything too fancy or complicated. ​


 480 g ramen noodle (4x 120g)
 80 g salted butter, at room temperature
 2 tbsp vegetable oil
 450 g mixed mushrooms, sliced
 250 ml salt-reduced vegetable stock
 1 tbsp cornflour
 1 tbsp Vegemite or Marmite
 4 eggs
 1 tbsp toasted black sesame seeds
 vegetable oil for frying
 Nori or seaweed snacks, shredded


Step 1

Firstly, cook the noodles then set aside. Then heat a large frying pan over high heat and melt half the butter with 1 tbsp oil in the pan. ​Add mushrooms and cook, stirring occasionally, for 2-3 minutes.​

Step 2

Stir through the Vegemite/Marmite and remaining butter. ​Add the noodles, tossing to coat evenly. ​

Then combine half the stock and cornflour in a small jug. ​Stir in the remaining stock and pour the stock mixture over the noodles. ​Continue to cook and stir for 1-2 minutes until thickened and well combined. ​

Divide among 4 serving bowls.​

Step 3

Return the pan to heat and heat the remaining oil. Then add the eggs and cook for 2-3 minutes until the whites are set but the yolk is still runny.​

Place an egg on each bowl of noodles and top and sprinkle sesame seeds and shredded seaweed snacks to serve.
