Creamy Avocado Pasta
This recipe will only require 15 minutes of your time to make this amazing bowl of creamy and rich avocado pasta! You can use any pasta of your choice for this recipe, but whole wheat pasta is a great option to choose for its high fibre content. Avocadoes are a great source of healthy fats and vitamins E, K, C, and much more! For the creamiest sauce, the secret lies in a perfectly ripe avocado and a fork! Once you try you will never reach for heavy cream again!

Firstly, cook the pasta in a pot and drain when done, without rinsing.
To make the sauce; add avocado, coriander, shallots, garlic, maple syrup, vegan cream cheese, salt, cumin and lemon juice to a food processor or blender and blend until very smooth.
In a bowl or pan, add the sauce to the pasta and mix together well. Serve the avocado pasta immediately or leave to chill in the fridge for around 20 minutes to serve cold.
