Nothing beats a bit of chicken and rice when your feel the familiar pinch of hunger or you're after some comfort food. This delicious and juicy traditional Chinese dish can be made in as little as 20 minutes right in the comfort of your kitchen. This Easy Crispy Chili Chicken has just the right balance of sweet, spice & sour kick to it. It is the perfect healthy dinner option for when you are counting those calories but don't want to deprive your tastebuds of some good-tasting food.
Perfect served with rice or any side of your choice.

Place the prepped chicken thighs in a large bowl. Then add the whisked egg into the bowl and coat the chicken.
Then stir the cornflour into the bowl, until each piece of chicken is covered in the light batter.
To a large non-stick frying pan, add 1 tbsp of rapeseed oil at a time, fry the pieces of chicken in batches on high heat, rotating once golden and crispy, taking around 4 minutes.
Set each batch aside once golden on both sides.
Meanwhile, steam or boil the broccoli and green beans. Also, start cooking the rice at this point according to packet instructions.
Once all the chicken is golden and crispy, using the same pan, reduce the heat and add the garlic and chilies.
Fry for a couple of minutes before adding the sweet chili sauce, soy sauce, cornflour slurry and lime juice.
Heat until the sauce thickens. Then, pour the chicken into the pan and toss to combine.
Serve with a portion of rice and greens and a sprinkle of spring onions and thinly sliced chilies.
