Carrot & Tomato Soup
This Carrot & Tomato Soup is the perfect Low-FODMAP, vegan and vegetarian recipe for a light lunch or dinner. Made with fresh carrots, tomatoes sautéed until perfection and topped with oregano for that classic flavour. This recipe is packed with the goodness and Vitamin C you need for a healthy gut without compromising on the tasty flavour you would want from this small bowl of goodness. Enjoy with a delicious buttery toast or on its own.

Take a large pot and heat the olive oil over medium-heat.
Once hot, add ginger and carrots, and allow to Sauté for a minute.
Add the tomatoes, oregano and salt whilst stirring.
Add the vegetable stock, bay leaf and nutritional yeast to the mixture. Allow to fully combine.
Allow mixture to come to boil and cook for 5 minutes, then reduce the temperature and cover the pot to simmer for 20-25 minutes until the vegetables are tender.
Once cooled down, remove bay leaf and in a blender blend until smooth and season with salt and pepper to taste.
Serve hot with a slice of toast!
