This Carrot & Tomato Soup is the perfect Low-FODMAP, vegan and vegetarian recipe for a light lunch or dinner. Made with fresh carrots, tomatoes sautéed until perfection and topped with oregano for that classic flavour. This recipe is packed with the goodness and Vitamin C you need for a healthy gut without compromising on the tasty flavour you would want from this small bowl of goodness. Enjoy with a delicious buttery toast or on its own.​


 30 ml olive oil
 3 g ginger
 450 g carrots, peeled and chopped into 1-inch slices
 680 g tomatoes
 1 tsp oregano
 1 tsp salt
 500 ml low FODMAP vegetable stock
 1 bay leaf
 15 g nutritional Yeast


Step 1

Take a large pot and heat the olive oil over medium-heat.

Once hot, add ginger and carrots, and allow to Sauté for a minute. ​

Step 2

Add the tomatoes, oregano and salt whilst stirring​.

Add the vegetable stock, bay leaf and nutritional yeast to the mixture. Allow to fully combine. ​

Step 3

Allow mixture to come to boil and cook for 5 minutes, then reduce the temperature and cover the pot to simmer for 20-25 minutes until the vegetables are tender. ​

Step 4

Once cooled down, remove bay leaf and in a blender blend until smooth and ​season with salt and pepper to taste.

Serve hot ​with a slice of toast!
