This Vegetables Frittata recipe is a perfect and versatile meal choice for breakfast through to dinner. Suitable for kids-packed lunches, easily cut up into bite-size chunks and they are delicious hot or cold.​
Best of all? There are no rules when making these, use any vegetables you have lying around the house, so no need to do an extra food shop. Delicious, quick and convenient!

Ingredients:

 6 large eggs
 60 ml milk of choice
 2 garlic cloves, minced
 6 spring onions, chopped
 180 g broccoli or broccolini, chopped
 ¼ tsp smoked paprika
 40 g crumbled feta
 sea salt to season
 ground black pepper

Directions:

Firstly, preheat oven to 200C​.

Start by whisking the eggs with milk, garlic and salt until combined and set aside. ​

Take a cooking pot (skillet 25-30cm) and add 1 tbsp of olive oil over medium heat. ​

Add broccoli/broccolini, spring onions with salt and pepper and being cooking whilst stirring occasionally for around 5-8 minutes. ​

Stir in the smoked paprika and add the egg mixture – evenly distributing the mixture in the pot. ​

Finish by crumbling feta cheese on top and bake for 15-20 minutes.
