Pre-heat the oven to 180C and grease a standard muffin pan with cooking spray.
Also, heat up a pan and add olive oil. To this pan add red, green bell pepper, and white onion to cook for 7 minutes until peppers are soft.
Also add baby spinach, broccoli, and cook for another 2 minutes. Furthermore, add garlic and cook for another 30 seconds. Finally, season with salt and pepper.
Whisk the eggs with the egg whites and stir in the vegetables.
Then pour it into a muffin pan.
Finally, bake for 15-20 minutes until muffins are firm to touch and serve!
