You don't need to stop by any fast-food chains for breakfast anymore with these Breakfast Egg Muffins that are super simple to make and just as tasty. This egg muffin recipe will help you whip up a quick yet filling breakfast that is packed with delicious flavours for a great morning routine. Healthy breakfast egg muffins that are low-carb, high in fiber and will be your kid's new favourite! ​
Play around with different vegetables and ingredients to make it fun and creative.

Ingredients:

 ½ tbsp olive oil
 1 red bell pepper, chopped
 1 green bell pepper, chopped
 1 white onion, chopped
 1 clove of garlic, minced
 15 g baby spinach
 45 g broccoli, chopped
 3 large eggs
 3 egg whites
 salt and pepper to taste

Directions:

Pre-heat the oven to 180C and grease a standard muffin pan with cooking spray.​

Also, heat up a pan and add olive oil. ​To this pan add red, green bell pepper, and white onion to cook for 7 minutes until peppers are soft.​

Also add baby spinach, broccoli, and cook for another 2 minutes.​ Furthermore, add garlic and cook for another 30 seconds. ​Finally, season with salt and pepper.​

Whisk the eggs with the egg whites and stir in the vegetables. ​

Then pour it into a muffin pan.​

Finally, bake for 15-20 minutes until muffins are firm to touch and serve!
