Start by pre-heating the oven to 190C and prepare a 20cm casserole dish. Also prepare a large saucepan to boil the green beans.
Prepare the vegetables: drain the mushrooms and slice them into quarters and trim the ends of the green beans. Finely slice the spring onion leaves and fresh parsley.
Bring the pan of water to to boil with the beans and boil for 3 minutes.
Drain the beans and immediately replace them in a bowl of cold water to stop them from cooking.
Place a medium saucepan over medium heat and spray some cooking spray to gently fry the mushrooms and onions, for 2 minutes.
Add some flour to this pan and allow to cook for 1 minute by stirring to avoid sticking. Slowly stir in the milk to the mixture. Let the sauce thicken with each splash of milk in the pan. Repeat this process with the stock.
Keep cooking until the sauce thickens, then add the parsley and seasoning.
Taste and add salt, to reach desired creamy mushroom consistency.
Once ready, drain the green beans and transfer them to the casserole dish
Mix into the creamy mushrooms sauce and top with the grated cheese and breadcrumbs.
Bake in the oven for 15 minutes and then grill the top of the casserole for 3-4 minutes to golden. Sprinkle some parsley and sprint onions on top and serve hot!
