Sweet Potato & Bean Chili
An easy vegan Chilli recipe with delicious softly roasted sweet potatoes, black beans, fresh tomatoes and lots of spices. A simple recipe abundant in flavours and packed with a great flavours.
Ypu can also easily amend this recipe by swapping out your vegetables of choice!

In a large pot, spray some oil to evenly coat the pan and heat on medium heat.
Add the onion and cook for around 5 minutes until softened and slightly brown.
Add garlic and continue cooking for another minute.
Continue by adding chili, garlic, onion powders, oregano and cumin and cook for an additional 1 minute.
Lower heat to simmer and add the beans, diced tomatoes, tomato paste, sweet potato, green chilies and vegetable broth then stir to combine.
Continue by heating up the mixture to high heat bringing to boil.
Then lower heat and continue to stir for 30-40 minutes on stove.
Alter consistency to taste by adding more water If necessary.
Cook until potatoes are tender.
Garnish with optional toppings such as diced avocado or sour cream. Enjoy!
