These Buffalo meatballs are easily made from scratch with just a few simple ingredients and can be enjoyed as a main meal or alongside your favourite choice of carb. This Chicken Meatballs recipe is very simple to follow and can be made in larger quantity if you are wanting to meal prep for the week ahead. They are tender and oven-baked until golden brown to seal in the flavour even more. Amazing choice for a high-protein and low-carb meal.​


 450 g ground chicken
 1 egg
 60 g Panko breadcrumbs
 50 g frozen cauliflower rice, defrosted
 ½ tsp onion powder
 ½ tsp smoked paprika
 1 tsp salt
 ½ tsp black pepper
 30 g parsley, chopped
 12 tbsp buffalo sauce



Firstly, line a baking sheet and pre-heat the oven to 180C.​

In a bowl combine ingredients: ground chicken, cauliflower rice, breadcrumbs, egg, parsley, garlic and onion powder. Season with salt and pepper​. Mix through the meatball mixture till everything is well combined.​

Take a large tablespoon of the mixture and roll it in your palms do the same with the rest of the mixture. ​

Pop the meatballs in the oven for 30 minutes , when ready take the meatballs out of the oven and toss them in buffalo sauce. ​
Can also top them with the sauce with a spoon to keep their shape. Enjoy!
