This Mediterranean inspired dish is high in protein with rich red lentils, kidney beans as well as lots of delicious vegetables. A perfect lean meal enjoyed on the side or served with wholegrain slice of bread. This salad if perfect for anyone wanting to lose weight but still enjoys the fresh taste and texture of a variety of flavours all packed together perfectly in one bowl. It is quick and simple to make with a few ingredients that are easy to get a hold of in any local supermarket. ​

Ingredients:

 150 g red lentils, dried
 400 g kidney beans (drained, and rinsed, 1 can)
 1 bell pepper
 4 spring onions
 2 cloves of garlic
 100 g tomato puree
 2 slices of wholegrain bread
 salt and pepper to taste

Directions:

Using dried red lentils, prepare according to package instructions (or just add 1 part red lentils to 1.5 parts of water with a little salt in a pot).​

Bring it to a boil and then let the lentils simmer for about 12-15 minutes until desired softness.​

Season with a little more salt, when the lentils are cooked.​

Meanwhile, cut the spring onions and bell pepper and grate the garlic.​

To a big bowl add all the ingredients, including the lentils and beans.​

Finally, add the tomato sauce (as much as you like), give it a stir, do a taste test and, if necessary, season one last time with salt and pepper.​

Serve hot with 2 slices of wholegrain bread!
