These Cheesy Chicken Fritters are truly for those cheese lovers out there. Crispy and juicy bite-size patties that complete a quick and healthy lunch. They are delicious, high in protein, and can be made Low-FODMAP, making it suitable for everyone! This fritters recipe is so simple and speedy to make it will soon become your go-to dish for when you're feeling peckish but don't want a heavy, calorie-filled meal. ​

Ingredients:

Cheesy Chicken Fritters
 500 g ground chicken
 2 eggs
 85 g mozzarella cheese (or vegan cheese)
 45 g gluten free plain flour
 2 tsp dried chives
 ¼ tsp table salt
 2 tbsp fresh basil, finely chopped
 60 ml mayonnaise
 olive oil, to drizzle
 salt and black pepper for seasoning
Aioli
 60 ml mayonnaise
 1 tsp lemon zest
 ¼ tsp garlic infused oil
 ½ tbsp lemon juice
 salt and pepper for seasoning

Start by grating the cheese and finely chop your fresh basil. Place the ground chicken, cheese, mayonnaise, eggs, flour, chives, and basil in a deep bowl and stir well. Add the salt for taste. Season the mixture with black pepper.

Heat a large frying pan over a stove, and drizzle with olive oil. Wait until the oil is hot. Use a ¼ cup measurement to scoop up the chicken and make fritters.
Move the fritters to the pan, and flatten them with a spatula, (or a spoon). Fry each side for 4-5 minutes until golden brown.

Add more oil according to the need. Once the chicken is completely cooked, place the fritters on a paper towel, so it soaks all the oil.​

To make the Aioli, mix the mayonnaise, lemon Zest, lemon Juice, and garlic-infused oil in a bowl. Mix until smooth, and then season it with salt and pepper.​
