This Low-FODMAP Vegan French toast is refined sugar-free, and a healthy take on a classic French Toast. Fluffy, soft and golden-brown deliciousness on your plate in just 15 minutes, it is so simple and quick to make to satisfy that early morning hunger in no time. It is the perfect dish to indulge in and satisfy your sweet-tooth without packing on the calories and a delicious breakfast for the whole family to enjoy. These tasty vegan French toasts can be eaten solo or enjoyed with syrup and berries for even more flavour. ​

Ingredients:

 60 ml soy milk with soy protein
 85 g soft plain tofu
 ½ tsp vanilla extract
 2 slices gluten-free bread
 1 tsp oil/ cooking spray
 maple syrup to drizzle

Directions:

To a blender, add the soft tofu, soy milk and vanilla extract and process until combined.​

Pour the mixture into a dish and place a slice of bread​ in the mix.

Coat both sides of the bread evenly and leave to soak for a minute.

Heat a frying pan to medium heat and spray some cooking oil. ​
Once hot, add the bread to the pan and let each side cook until golden brown or crispy. ​

Serve on a plate with maple syrup and fruit of choice!
