Low-FODMAP BBQ Lamb Skewers

Cut the lamb steak into small chunks. Move them to a large shallow dish, and add the infused oil, lemon juice, oregano, thyme, and parsley and then add black pepper for better taste. Mix well. Refrigerate it for 2-4 hours or overnight so that the lamb steak soaks up the mixture well.
After refrigerating it overnight, take it out, and slide the chunks into the skewers. Don’t forget to add red bell pepper and sliced courgette.
To make the mashed potatoes, boil the potatoes for 15-20 minutes. In the meantime, you can BBQ your skewers. Drizzle some olive oil over them, and BBQ for 2-3 minutes per side until medium cooked (Or according to taste).
Drain the potatoes, sprinkle with salt and oregano, and drizzle it with olive oil. Gently mash the potatoes with a potato masher. Serve the lamb skewers and smashed potatoes hot
