Eggs are a wonderful and nutritious breakfast choice, but are you bored of your regular fried eggs every morning? Why not try a new recipe and combine it with some pesto. Delicious, high in protein and filling start to a busy day. This recipe is so convenient you will have your breakfast ready in just under 15 minutes.
Ingredients:
2 slices wholemeal bread
2 eggs
40 g red pesto
25 g light ricotta
1 tsp oregano to garnish (optional)
Directions:

In a pan over medium heat, spray cooking spray and begin heating the pesto.
Crack the eggs over the pesto and let cook until desired.

Toast the slices of bread and spread some ricotta evenly on each.
Place each egg on the toast and sprinkle some oregano on top. Enjoy!
