Vegan Tofu Gnocchi with Creamy Garlic Sauce

Forget making regular Gnocchi because this all-new recipe is so simple and convenient takes just 30 minutes.
This recipe is healthy and less carb-heavy than traditional potato gnocchi with the same bouncy texture we love. Just toss all ingredients together and cook until crispy. Absolutley delicious when coated in the rich garlic sauce.

Ingredients:

Tofu Gnocci
 300 g cold pressed tofu
 50 ml plant-based milk of choice
 200 g wheat flour
 1 tbsp olive oil
 salt to season
 pinch of pepper
Creamy Garlic Sauce
 ½ tbsp olive oil
 4 cloves of garlic, minced
 1 shallot, finely chopped
 350 ml unsweetened almond milk
 470 ml low-sodium vegetable broth
 30 g parmesan cheese, grated (optional)
 salt and pepper to taste

Directions:

Step 1 - Make the Tofu Gnocci

Chop the block of tofu into small chunks and place them into a food processor/ blender along with milk of choice.

Add the flour and salt to the mixture and blend all the ingredients together until thick in consistency.

Place dough on a mat with flour and cut into chunks and roll dough into long thin pieces. Then cut into gnocchi-sized bites. Use a fork to mold gnocchi into shape.

In a pan boil hot water with the addition of some salt and add the gnocchi to cook for about 3-5 minutes. ​

Then take the drained gnocchi and carefully heat up on some olive oil in a frying pan until slightly crispy. ​

Step 3 - To make the creamy garlic sauce

Heat a medium pan and add the olive oil, garlic and shallot then stir. Cook for 2 minutes to allow the shallot to go translucent. Cook until soft but avoid overcooking until brown.

Then pour the almond milk, vegetable broth, salt, and stir. Add the crisped tofu gnocchi to this mixture.

Bring the mixture to boil and allow it to thicken, then reduce to simmer. Meanwhile, continue stirring occasionally.

Cook for about 20 minutes or until reach desired thickness or consistency. If the liquid is too much, drain or alternatively if too thick, add more almond milk. Season to taste with salt and pepper!
