Moroccan Chickpea Stew
The distinct flavours of Morrocco in one warming dish of chickpeas. This delicious recipe is made with green beans, spinach, aubergine and lots of spices for a wonderful combination of tastes and flavours. Resist the temptation for seconds, (or not) because this meal will be having you asking for more! This convenient recipe is the perfect for cooking on a budget, made from all cupboard staple ingredients.

Rinse and drain chickpeas, and chop the aubergine whilst preparing the rest of the ingredients.
In a large pan, at medium-high heat, sauté aubergine in olive oil for 1-2 minutes. Add the chickpeas, green beans, herbs, spices and tomato paste.
Add 60ml of water and cover the pan with a lid to cook for 5 minutes, adding water if needed.
Add spinach and cook for 1-2 minutes then turn off heat and add the garlic.
Squeeze the lemon juice over the skillet and add salt to taste. Serve hot!
