This easy fried rice will be your next go-to mid-week recipe. Long-grained rice, softened shallots, snow peas, prawns and much more are tossed together in a warm and hearty bowl in just 15 minutes! This recipe is so versatile and can be tried in many variations or just with whatever ingredients you have at home already. The secret to that delicious silky flavour is to generoulsy mix with some sesame oil. This meal is the perfect Entree or makes a tasty side too!

Ingredients:

 450 g jasmine rice, cooked or precooked and packaged rice
 ½ barbecued chicken
 1.50 tbsp peanut oil
 250 g green prawns, peeled
 1 red pepper, cut into strips
 100 g snow peas, halved diagonally
 3 green shallots, sliced diagonally
 2 tbsp soy sauce
 2 tsp sesame oil
 sriracha sauce, to drizzle (optional)

Directions:

Step 1

​First, cook the rice following packet instructions. Then remove the meat from the barbecued chicken and shred.​

Heat 2 tsp of the oil in a deep-frying pan over high heat. ​Add prawns and cook, stirring, for 2 minutes and transfer to a plate. ​

Reduce heat to medium-high and add 2 tsp oil to the pan. Cook the pepper, snow peas and shallot, stirring, for 3 minutes or until tender-crisp. Add to plate with the prawns.​

Step 3

Heat the remaining oil in the pan and add the rice. ​Cook, stirring, for 2 minutes then ​return prawns and vegetables to the pan. ​

Add chicken, soy sauce and sesame oil. ​

Toss to combine and heat through. Drizzle with sriracha sauce, if desired, and enjoy!
