This Tofu Scramble recipe is perfect for those mornings that you are missing a classic breakfast of scrambled eggs! This recipe will bring an eggy and tangy scramble to your plate. A wonderful vegan alternative done in just 15 minutes and 6 ingredients! You will never have to miss eating eggs again, especially if you are new to the vegan way of life! This high-protein meal is the perfect way to start your day and provide you with the energy your need to stay fuelled throughout a busy day. ​

Ingredients:

 85 g tofu
 4 tbsp nutritional yeast
 2 tsp paprika
 2 tsp turmeric
 1 tsp garlic powder
 1 tsp onion powder
 1 tsp salt
 ½ tsp pepper

Directions:

Combine all the spices in a container​. Meanwhile, press the tofu and crumble into smaller pieces squeezing any excess water.

Heat some olive oil in a frying pan and add tofu to cook for 4-5 minutes on medium heat whilst stirring frequently. ​

Add 2 tbsp of the spice mix with 3 tbsp of plant-based milk and continue cooking ands stirring.

Serve tofu scramble on toast or with a side of a salad.
